BEET SOUP
- 3 medium to large beets
- 4-5 cups water (to desired consistency)
- ½ cup walnuts blended with 1 cup water
- 1 large onion
- 1 clove garlic
- 1/8” ginger (optional)
- Salt to taste
DIRECTIONS:
1. Sauté onions and garlic
2. Add the beets and water to the pot and bring to a boil
3. Lower the flame and simmer until soft
4. Blend the walnuts, ginger, salt and water
5. Separately blend the beets until smooth and creamy
6. Combine both mixtures and bring to a boil and close the flame
7. Swirl 2 to 3 tablespoons of coconut cream, yogurt or nut milk into the center of the bowl and garnish with some leaves and/or black sesame seeds.
