BUTTERNUT SOUP
- 1 large butternut
- 2 large onions
- 1 small parsnip
- 1 small celery root
- 3 celery stalks
- ¾ cup hemp nuts
- Add water as needed to desired consistency
- Salt to taste
Directions
- Sauté onions
- Cut up all vegetables
- Bring to a boil
- Simmer until soft
- Add celery stalks and hemp nuts
- Blend all ingredients in a high-speed blender
- Serve with some sprouts in the center of each plate
Ø You can warm the soup but don’t let it boil if you want the benefits of the raw celery and hemp nuts.
