CHOCOLATE DATE & NUT CLUSTER

CHOCOLATE DATE & NUT CLUSTER

 

 

  • 15 Medjool dates
  • Approximately ½ cup peanut or any nut butter
  • Approximately ¾ to 1 cup salted roasted peanuts or any nut or seed
  • 10 oz. bittersweet chocolate
  • Salt as needed

 

Directions

 

  1. Remove pits from the dates
  2. Slightly chop the nuts
  3. Line a cookie sheet with parchment paper
  4. Open the dates, place onto cookie sheet, open end up, approx. 3” apart, and flatten each date using the bottom of a glass cup
  5. Place a spoonful nut butter onto each date
  6. Sprinkle peanuts or nuts over it
  7. Gently press down the peanuts or nuts to flatten
  8. Sprinkle a little salt over each cluster
  9. Break up the chocolate into pieces and melt in a double boiler.
  10. Cover each cluster with melted chocolate
  11. Sprinkle peanuts or nuts overtop
  12. Keep in the freezer

 

Ø  If you want more crunch, you can top each cluster with popcorn, rice crispies, coconut flakes or your favorite seed.
