CHOCOLATE DATE & NUT CLUSTER
- 15 Medjool dates
- Approximately ½ cup peanut or any nut butter
- Approximately ¾ to 1 cup salted roasted peanuts or any nut or seed
- 10 oz. bittersweet chocolate
- Salt as needed
Directions
- Remove pits from the dates
- Slightly chop the nuts
- Line a cookie sheet with parchment paper
- Open the dates, place onto cookie sheet, open end up, approx. 3” apart, and flatten each date using the bottom of a glass cup
- Place a spoonful nut butter onto each date
- Sprinkle peanuts or nuts over it
- Gently press down the peanuts or nuts to flatten
- Sprinkle a little salt over each cluster
- Break up the chocolate into pieces and melt in a double boiler.
- Cover each cluster with melted chocolate
- Sprinkle peanuts or nuts overtop
- Keep in the freezer
Ø If you want more crunch, you can top each cluster with popcorn, rice crispies, coconut flakes or your favorite seed.
