CHOCOLATE MOUSSE OR ICE CREAM
- 2 medium ripe avocados- peeled
- 10 oz. coconut milk (Leiber’s has an organic one) -You can substitute this with 8 oz. nut milk
- 6 tbsp. maple syrup, more or less to taste
- 6 tbsp. cacao powder
- 2 tsp. vanilla extract
- 1 tsp. cinnamon (optional)
- A pinch of salt
Directions:
- Place all ingredients into a food processer and blend until smooth.
- Taste and adjust to your preferences. Add more cacao powder if you want a deeper chocolate flavor, or add more sweetener if you want it sweeter. Blend again.
- The mixture should be thick but pourable. If the mixture seems too heavy add one or more tbsp. of coconut or nut milk and blend again.
- Enjoy immediately for a pudding texture, or for a thicker mousse-like texture place in the fridge for an hour to firm.
- Put into ice pop molds or cups and freeze for ice cream.
- You can top it with some chopped nuts, toasted shredded coconut, a drizzle of peanut butter or use your imagination!
