COFFEE AND ALMOND COOKIE PESACH AND YEAR ROUND

Coffee Almond Cookies

Pesach and Year-round

 

·  2 cups almond flour

·  1 tbsp. organic coffee

·  ¾ cup sugar

·  ½ tsp salt

·  ½ tsp cinnamon

·  4 egg whites

 

DIRECTIONS:

 

1.    Preheat the oven to 325

2.    Line a cookie sheet with parchment paper

3.    Mix the dry ingredients in a bowl

4.    Beat the egg whites until stiff

5.    Gently fold the dry ingredients into the egg whites and         mix gently

6.    Drop by tbsp. on the cookie sheet

7.    Top each cookie with half a pecan or walnut

8.    Bake for 20-25 minutes

9.    Allow to cool before handling
