CREAMY CARROT SOUP

CREAMY CARROT SOUP

  • Approx. 2 lb. carrots

  • 2 lg. onions sautéed

  • 7-8 cups water (to desired consistency)

  • 3/4 cup hemp nuts blended with 2 cups water

  • ½ tsp. ginger powder or more to taste

  • Salt to taste

 

DIRECTIONS:

 

1.    Sauté onions

2.    Wash and cut the carrots into big chunks

3.    Add the carrots, ginger water to a pot, and bring to a  boil

4.    Lower the flame and simmer until soft

5.    Blend the soup until smooth and creamy

6.    Separately blend the hemp nuts with 2 cups water

7.    Combine both mixtures, and add salt to taste

8.    Bring to a boil again, then close the flame

9.    Garnish with some leaves and/or pumpkin seeds, black sesame seeds or use your imagination.
