FALAFEL FLATS

  • 1 cup raw sprouted chic-peas
  • 1 red pepper or another vegetable as celery (approx. 1 cup)
  • 1 large carrot
  • 4 large garlic
  • 1 medium onion
  • 2 tsp cumin
  • 4 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1 tsp dry basil (optional)
  • ¾ cup of any ground nut or seed or 1 cup bread crumbs
  • 2 tbsp. ground flax or chia seeds 

Directions

  1. Soak chic-peas for about 24 hours, changing the water a few times in between. Sprout until tiny shoots come out, this will take about a day or so.   2. Cut the vegetables
  3. Place all ingredients except for the ground nuts or bread crumbs and chia or flax meal into a high-speed blender, blend well.
  4. Transfer the mixture into a bowl, add the nuts or bread crumbs and chia or flax meal and mix well. If the batter is too sticky add more of any of the dry ingredients.
  5. Form balls with wet hands depending on the size you want and place onto a parchment lined baking sheet. Use your fingers to flatten the balls to ¼” thick approx.
  6. Bake at 325 for about 25 minutes. They’re done when there’s a slight firmness to the touch.
  7. Cool before handling
  8. Yields about 14 flats.
