Gluten Free Quinoa Flatbreads

GLUTEN FREE QUINOA FLATBREADS

 

·        10.5 oz. quinoa

·        1 cup almonds

·        2 tbsp flax seeds

·        2 tbsp chia seeds

·        1 tbsp. sunflower seeds

·        2 tbsp. sesame seeds

·        1 tsp baking powder

·        1 tsp baking soda

·        1 avocado

·        Juice of a lemon or lime

·        1 tbsp. honey or maple syrup

·        A little over ¾ cup almond or another nut milk

 

Directions

 

1.     Start by lining a baking tray with parchment paper and preheat the oven to 340⁰ F

2.     Add the almonds to a food processor or a blender and blitz until you get it to a crumbly consistency, like and almond meal.

3.     Add quinoa and flax seeds to a food processor or a blender and blitz until you get to a flour consistency.

4.     Mix quinoa and flax seeds in a bowl with the almonds, sesame seeds, sunflower seeds, chia seeds, sea salt, baking powder and baking soda.

5.     In another bowl, peel and mash the avocado. Add lemon/lime juice, maple syrup, and nut milk, and mix well.

6.     Add the wet ingredients to the dry ingredients and mix well for2-3 minutes until you get a sticky, firm dough.

7.     Start forming balls out of the dough- (approximately ¼ cup of dough per ball), then slightly flatten them and place them on the baking tray, keeping a little distance between each other.

8.     Bake for around 25 minutes or until they are golden brown. If you see the bottom browning more than the top, turn them over. To check if they’re done, poke with a toothpick. If it comes out clean, they’re done.

9.     Let them completely cool down, and enjoy!
