GLUTEN FREE RED LENTIL WRAPS
- 1 cup red lentils
- 1 ¾ cup water
- 2-3 tbsp. maple syrup/honey or a sweetener of your choice
- Pinch of salt
- 2 tbsp oil
Directions
- Soak the red lentils for 1 to 4 hours, rinse well
- Add all ingredients in a blender and process on high speed until smooth
- Preheat a non-stick pan over medium heat
- Pour ¼ cup of the batter into the hot pan and spread it into a 6” round
- When the edges look firm flip the wrap over. Cook for another 15 seconds and remove from pan
- Repeat the process with the remaining batter
Cut the wrap in half and spread the desired filling over half of the wrap Cover with the other half of the wrap
Fill with any of the following: avocado, vegetables, tuna, chumus, mashed potatoes, blended cooked white beans with sautéed onions and garlic or just get creative.
Top with sauteed vegetable or any sauce.
