HONEY CAKE EINKORN

• 1 cup oil
• 1 cup coconut sugar
• 1 cup honey
• 3 eggs
• 1 tsp b powder
• ½ - 1 baking soda
• ½ tsp salt
• 2 tsp lemon juice
• ½ cup water
• 1 tsp coffee
• 3 cups einkorn medium whole flour

DIRECTIONS

1. Add oil, sugar, honey and eggs into bowl, beat well for about 10 minutes.
2. Gradually add the remaining ingredients
3. Pour into a 10 x 10” lined baking pan
4. Bake at 350 for 45 minutes or until done, check with a toothpick- be very gentle, it can easily fall in. Do not remove from oven until cool.
