MOSTLY RAW BEAN SOUP

  • 3-4 cups Great Northern, Cannellini or any other white bean.
  • 2-3 large onions
  • 4 large garlic
  • 3 celery stalks
  • 1-2 large cucumbers
  • 2 collard green leaves, sunflower sprouts or organic girl greens
  • ½ cup hemp nuts or any seed or nut
  • Salt to taste
  • A small piece of ginger
  • Add water to desired consistency

  2. Soak the beans for 8 hours or overnight, rinse well
  3. Cook the beans until soft
  4. Sauté’ onions and garlic
  5. Wash the greens well under running water
  6. Blend 2/3 of the beans with all other ingredients.
  7. Add the rest of the beans to the soup.
  • You can warm the soup but don’t let it boil if you want the benefits of the raw vegetables.
  • You can use your imagination and create many different versions of soup
  • You can use whatever vegetables you have on hand. Kohlrabi, celery root, parsnips, carrots to name a few. For the cooked ingredients you can use squash, string beans, sweet potato, winter squashes, the possibilities are endless. The secret for a good tasty soup is to use a lot of sautéed onions and garlic and the added blended seeds or nuts.
  • It's a great way to sneak in raw vegetables, seeds or nuts if your kids refuse to eat them otherwise.
