3-4 cups Great Northern, Cannellini or any other white bean.
2-3 large onions
4 large garlic
3 celery stalks
1-2 large cucumbers
2 collard green leaves, sunflower sprouts or organic girl greens
½ cup hemp nuts or any seed or nut
Salt to taste
A small piece of ginger
Add water to desired consistency

Soak the beans for 8 hours or overnight, rinse well
Cook the beans until soft
Sauté’ onions and garlic
Wash the greens well under running water
Blend 2/3 of the beans with all other ingredients.
Add the rest of the beans to the soup.
You can warm the soup but don’t let it boil if you want the benefits of the raw vegetables.

You can use whatever vegetables you have on hand. Kohlrabi, celery root, parsnips, carrots to name a few. For the cooked ingredients you can use squash, string beans, sweet potato, winter squashes, the possibilities are endless. The secret for a good tasty soup is to use a lot of sautéed onions and garlic and the added blended seeds or nuts.
