MOSTLY RAW VEGETABLE SOUP
- 6 plum tomatoes
- 1 medium to large cucumber
- 1 pepper
- 2 stalks celery
- 1 tsp. cumin
- 1 tsp. paprika
- Salt to taste
- ½ cup mixed greens as spinach, collard, kale, lettuce, parsley or any greens of your choice
- A handful of sunflower greens (optional)
- 2 large onions sautéed
- 4 garlic sautéed
- 2 medium cooked potatoes
- ½ cup pumpkin seeds
- Add water as needed to desired consistency
Directions
- Cook the potatoes until soft
- Sauté’ onions and garlic in a little oil (do not use coconut oil for this recipe)
- Blend all ingredients in a high-speed blender
- Add sunflower seeds for a nice crunch, mung bean sprouts or use your imagination
- You can warm the soup but don’t let it boil if you want the benefits of the raw vegetables.
