MOSTLY RAW VEGETABLE SOUP

MOSTLY RAW VEGETABLE SOUP

  • 6 plum tomatoes
  • 1 medium to large cucumber
  • 1 pepper
  • 2 stalks celery
  • 1 tsp. cumin
  • 1 tsp. paprika
  • Salt to taste
  • ½ cup mixed greens as spinach, collard, kale, lettuce, parsley or any greens of your choice
  • A handful of sunflower greens (optional)
  • 2 large onions sautéed
  • 4 garlic sautéed
  • 2 medium cooked potatoes
  • ½ cup pumpkin seeds
  • Add water as needed to desired consistency

Directions

  1. Cook the potatoes until soft
  2. Sauté’ onions and garlic in a little oil (do not use coconut oil for this recipe)
  3. Blend all ingredients in a high-speed blender
  4. Add sunflower seeds for a nice crunch, mung bean sprouts or use your imagination
  • You can warm the soup but don’t let it boil if you want the benefits of the raw vegetables.
