NUT MILK PULP COOKIES

NUT MILK PULP COOKIES

  • 1 cup nut pulp, pressed into cup
  • 1 cup shredded coconut
  • 1/3 cup maple syrup
  • 1 tbsp. ground flax seeds
  • 2 tbsp. water
  • 2-3 tbsp. nut butter
  • ¼ tsp. salt
  • Vanilla to taste

Directions

  1. Preheat the oven at 350
  2. Mix all ingredients in a bowl
  3. If the dough looks dry add water, 1 tbsp. at a time until it can easily be pressed together
  4. Cover a cookie sheet with parchment paper
  5. Form balls with wet hands, flattening with your fingers
  6. Bake at 350 for 25 to 30 minutes
  7. Roll into a coating of your choice as crushed nuts, shredded coconut or use your imagination
  8. For a raw version omit baking, enjoy out of the fridge or freezer
