NUT MILK PULP COOKIES
- 1 cup nut pulp, pressed into cup
- 1 cup shredded coconut
- 1/3 cup maple syrup
- 1 tbsp. ground flax seeds
- 2 tbsp. water
- 2-3 tbsp. nut butter
- ¼ tsp. salt
- Vanilla to taste
Directions
- Preheat the oven at 350
- Mix all ingredients in a bowl
- If the dough looks dry add water, 1 tbsp. at a time until it can easily be pressed together
- Cover a cookie sheet with parchment paper
- Form balls with wet hands, flattening with your fingers
- Bake at 350 for 25 to 30 minutes
- Roll into a coating of your choice as crushed nuts, shredded coconut or use your imagination
- For a raw version omit baking, enjoy out of the fridge or freezer
