NUTTY OATMEAL COOKIES
- 1½ cup organic sugar
- 1¼ cups coconut sugar
- 4 eggs
- 4 cups thick rolled oats
- 2½ cups whole wheat flour
- 2 cups coconut oil
- 1½ tsp. salt
- 2 tsp. baking powder
- 2 tsp vanilla extract
- 1½ cups chopped walnuts or any nut
- ¾ cups grated coconut
- 2 oz. cacao nibs (optional)
Directions
- Preheat oven to 350
- Liquify coconut oil if solid by placing jar into boiling water
- Beat sugar and eggs for about 10 minutes, then slowly add liquefied coconut oil and beat well
- Add flour, oats, salt, baking powder and mix well
- Fold in the nuts, cacao nibs, coconut and mix a little more
- Form balls with wet hands and place onto a parchment lined baking sheet. Use your fingers to flatten the cookies to ¼ to 1/3” thick and bake at 350 for 20-25 minutes
- You can add more of the coconut sugar and reduce the organic regular sugar or even do all coconut sugar for a healthier cookie, but it will lose the chewiness.
