NUTTY OATMEAL COOKIES

NUTTY OATMEAL COOKIES

  • 1½ cup organic sugar
  • 1¼ cups coconut sugar
  • 4 eggs
  • 4 cups thick rolled oats
  • 2½ cups whole wheat flour
  • 2 cups coconut oil
  • 1½ tsp. salt
  • 2 tsp. baking powder
  • 2 tsp vanilla extract
  • 1½ cups chopped walnuts or any nut
  • ¾ cups grated coconut
  • 2 oz. cacao nibs (optional)

Directions

  1. Preheat oven to 350
  2. Liquify coconut oil if solid by placing jar into boiling water
  3. Beat sugar and eggs for about 10 minutes, then slowly add liquefied coconut oil and beat well
  4. Add flour, oats, salt, baking powder and mix well
  5. Fold in the nuts, cacao nibs, coconut and mix a little more
  6. Form balls with wet hands and place onto a parchment lined baking sheet. Use your fingers to flatten the cookies to ¼ to 1/3” thick and bake at 350 for 20-25 minutes
  7. You can add more of the coconut sugar and reduce the organic regular sugar or even do all coconut sugar for a healthier cookie, but it will lose the chewiness.
