Quinoa Brownies

QUINOA BROWNIES (Gluten Free)

 

·         2 cup cooked quinoa (blend optional- for smoother texture)

·         3/4 cup coconut oil, melted

·         4 eggs

·         1/3 cup nut milk

·         1 ½ tsp. vanilla

·         1 cup organic sugar

·         1 cup carob powder

·         1 ½ baking powder

·         1 tsp. baking soda

·         ½ tsp. salt

·         ½ cup chopped pecans

·         ½ cup carob chips

 

Directions

1.    Blend first 5 ingredients well

2.    Add sugar, carob powder and all the other ingredients

leaving pecans and carob chips last

3.    Fill cake pan or baking cups (3 quarters full) and bake for 350⁰ for 40 to 45 minutes.

 

Note: Quinoa is easy to digest, high in iron, protein and fiber
