RAW VEGGIE NUT PATTIES
- 2 cups pumpkin seeds or any seed or nut of your choice
- 2 cups chopped celery root
- 1 small beet
- 1 cup chopped carrots
- ½ cup chopped red onion
- 2 cloves of garlic
- 1 tbsp. Caraway seeds
- Salt to taste
- 2 tbsp. olive oil
- ¼ nutritional yeast
- 2 tbsp. ground flax or chia seeds
Directions
- Soak the pumpkin seeds or nuts in water for 4-6 hours
- Put the first 7 ingredients through a juicer as the Champion or Samson which have a blank piece so it doesn’t juice but blends everything you put through it. You can also use a blender but the juicer will blend it much finer.
- Add the last 4 ingredients and mix well.
- Form into patties, you may need to wash and wet your hands in between.
- Dehydrate the patties at 105 to 110 degrees for a couple of hours until it has a bit of a crust. Flip over on the other side and dehydrate until it feels somewhat firm.
For oven use, turn oven on the lowest and place the patties on a parchment paper lined baking pan. Check when done. It will take less time in the oven to get crispy.
