Raw Veggie Nut Patties

RAW VEGGIE NUT PATTIES

 

·         2 cups pumpkin seeds or any seed or nut of your choice

·         2 cups chopped celery root

·         1 small beet

·         1 cup chopped carrots

·         ½ cup chopped red onion

·         2 cloves of garlic

·         1 tbsp. Caraway seeds

·         Salt to taste

·         2 tbsp. olive oil

·         ¼ nutritional yeast

·         2 tbsp. ground flax or chia seeds

 

 

Directions

 

1.    Soak the pumpkin seeds or nuts in water for 4-6 hours

2.    Put the first 7 ingredients through a juicer as the Champion or Samson which have a blank piece so it doesn’t juice but blends everything you put through it. You can also use a blender but the juicer will blend it much finer.

3.    Add the last 4 ingredients and mix well.

4.    Form into patties, you may need to wash and wet your hands in between.

5.    Dehydrate the patties at 105 to 110 degrees for a couple of hours until it has a bit of a crust. Flip over on the other side and dehydrate until it feels somewhat firm.

 

For oven use, turn oven on the lowest and place the patties on a parchment paper lined baking pan. Check when done. It will take much less time in the oven to get crispy.
