RAWMAZING SALAD
· 1 medium/large sweet potato or purple sweet potato
· 1 medium yellow squash
· 1 medium green squash
· ½ cup sprouted mung beans
· Juice of one lemon or lime
· 2-3 tbsp. olive oil
· ¼ cup or so chopped nuts, pine nuts or sliced almonds
· 2-3 tbsp honey or maple syrup
Optional: Add some purple cabbage, sunflower greens, shredded carrots, sliced red onion. You can use regular, light orange or purple sweet potato or a mix all.
Nut sauce
· 1 cup nut butter
· 5 tbsp honey
· 2 tbsp lemon or lime juice
· Add water for desired consistency
Directions:
1. Peel and shred the sweet potato and squashes. You can use the large shredding attachment from the Braun food processor or a vegetable spiralizer.
2. In a large bowl add the shredded veg.
3. Add the mung beans and other vegetables if adding any.
4. Pour the oil and lemon juice on top of the vegetables.
5. Gently mix all the ingredients
6. Add more lemon juice or sweetener as desired.
7. Serve with the nut sauce over it and sprinkle with the chopped nuts
