SOFT CHOCOLATE COOKIE
GLUTEN FREE
- 1 medium to large sweet potato
- 1 egg
- ½ cup hot water
- 8 dates soak in the water
- ½ tsp vanilla extract
- 6-8 tbsp. cacao powder
- 2 tbsp. coconut flour
- 6 oz. peanut or any nut butter
- Stevia to taste
Directions
- Bake sweet potato until soft, remove from oven and let it cool
- Soak dates in the hot water for 30 minutes or more
- Blend dates and sweet potato in a high-speed blender. The food processor might not blend it too well.
- Add all ingredients to the food processor or blender and blend well
- Drop by spoonful onto a parchment paper lined baking pan
- Bake for approx. 40 minutes or until slightly firm
- Allow to cool before handling
