SWEET POTATO LENTIL STEW
- 4 cups water or soup stock
- 3 cups peeled cubed sweet potatoes (about 1¼ lb.)
- 1½ cups lentils, rinsed
- 3 medium carrots, cut into ½” pieces
- 1 onion chopped
- 4 cloves of garlic, minced
- ½ tsp. turmeric
- ¼ tsp. ginger
- Salt to taste
Directions
Soak lentils for 5-8 hours or overnight. Lentils do not require soaking but it’s definitely beneficial. If you prefer you can sprout them for a day or so until they grow little white shoots before cooking.
- Sauté’ the onion and garlic
- Prepare the vegetables and combine all ingredients in a slow cooker, cook for a few hours or until vegetables are soft.
Yields approx. 6 servings
NOTE: Sweet potatoes and carrots contain plenty of vitamin A in the form of Beta-carotene. They are also a rich source of vitamin K, vitamin C, potassium, manganese, folate, phosphorus, fiber and more.
