SWEET POTATOE CAKE
- 1 lb. sweet potato
- ¾ cup walnuts
- 4 eggs
- 1 ½ cup oil
- 2 tbsp. lemon juice
- 2 cups whole wheat flour
- 1 tsp vanilla extract
- 1 cup organic sugar
- ¾ cup coconut sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp. cinnamon
- Pinch of salt
Directions
- In a food processor, process sweet potatoes, don’t over blend
- Add walnuts, eggs, oil, lemon juice, vanilla and process for 20-30 seconds
- Add the dry ingredients, process for 30 seconds to 1 minute
- Oil Bundt pan and sprinkle with flour
- Pour the batter into pan,
- Bake for 1 hour or test with toothpick.
This recipe is also great for cupcakes.
