SWEET POTATOE CAKE

SWEET POTATOE CAKE

  • 1 lb. sweet potato
  • ¾ cup walnuts
  • 4 eggs
  • 1 ½ cup oil
  • 2 tbsp. lemon juice
  • 2 cups whole wheat flour
  • 1 tsp vanilla extract
  • 1 cup organic sugar
  • ¾ cup coconut sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp. cinnamon
  • Pinch of salt

Directions

  1. In a food processor, process sweet potatoes, don’t over blend
  2. Add walnuts, eggs, oil, lemon juice, vanilla and process for 20-30 seconds
  3. Add the dry ingredients, process for 30 seconds to 1 minute
  4. Oil Bundt pan and sprinkle with flour
  5. Pour the batter into pan,
  6. Bake for 1 hour or test with toothpick.
          This recipe is also great for cupcakes.
