Egg Free Vegetable Latke
- 2 large potatoes
- 1 small knob celery, the size of a large potato
- 1 medium to large parsnip
- 1 medium to large carrot
- 1 medium onion
- 1 large onion sautéed
- 3 heaping tbsp. ground flax or chia seeds
- ¼ cup olive oil
- ¼ cup nutritional yeast
- 3 tbsp. water
- ¼ tsp. turmeric
- ½ tbsp. salt
Directions
- Sauté’ the onion with a little oil until lightly brown
- Blend the first 5 ingredients through the kugel blade in the food processor
- In a bowl mix all the ingredients together
- Prepare a lightly oiled parchment lined baking pan
- Form into patties with wet hands and place onto the baking pan
- You can pat a little oil on each patty
- Bake at 350 for about 45 minutes or until done. They’re done when there’s a slight firmness to the touch.
- Let cool before handling
