VEGETABLE LATKE

Egg Free Vegetable Latke

  • 2 large potatoes
  • 1 small knob celery, the size of a large potato
  • 1 medium to large parsnip
  • 1 medium to large carrot
  • 1 medium onion
  • 1 large onion sautéed
  • 3 heaping tbsp. ground flax or chia seeds
  • ¼ cup olive oil
  • ¼ cup nutritional yeast
  • 3 tbsp. water
  • ¼ tsp. turmeric
  • ½ tbsp. salt

Directions

  1. Sauté’ the onion with a little oil until lightly brown
  2. Blend the first 5 ingredients through the kugel blade in the food processor
  3. In a bowl mix all the ingredients together
  4. Prepare a lightly oiled parchment lined baking pan
  5. Form into patties with wet hands and place onto the baking pan
  6. You can pat a little oil on each patty
  7. Bake at 350 for about 45 minutes or until done. They’re done when there’s a slight firmness to the touch.
  8. Let cool before handling
